Easy & Elegant Fish For Vitamin D

Ingredients:

1.5 lbs of white wild caught halibut (or trout, mackerel, catfish, etc.)

2+ tablespoons ghee 7 garlic cloves, finely chopped

1/2 bunch of cilantro, chopped

1 1/2 limes 1 lemon Celtic salt and freshly ground pepper to taste

1 tablespoon extra virgin olive oil

Preparation:

Fish Preheat oven to 375 degrees. Rinse and pat dry fish. Place on a baking tray, skin side down. Squeeze lemon juice, olive oil, salt and pepper over the top. Let stand for 30 minutes. (Begin making sauce after the fish has been "standing" for 15 minutes.) Bake fish for 12-15 minutes depending on thickness until flaky. Remove fish, transfer to a platter and pour sauce over fish and Enjoy!

Sauce

Melt ghee in a medium saucepan on medium, add garlic and sauté for 5 minutes - until browned. Add cilantro and sauté for 10 minutes - until soft. Lower heat to a low

simmer and add juice from limes. If drying out, add 1 tablespoon ghee. Cover and keep until ready to pour on fish.
